Paris’ best eclair? Maison Pradier (St Germain)

We stopped by Maison Pradier to try their chocolate eclair. On their window they claim to have placed 1st place in some eclair competition. They use an 80% chocolate which is extremely high and can be overwhelmingly bitter and acidic to the palate. The pate au choux was nice and light. The chocolate cream inside was rich and smooth, but was definitely on the bitter side because of the 80% chocolate used. Overall a good eclair, but my vote for best eclair in Paris goes to Nelly Julien in the 7th.
