L’atelier de Joel Robuchon (Saint Germain)

Today we paid a visit to L’atelier de Joel Robuchon in the Saint Germain neighborhood of Paris. Joel Robuchon is widely considered the most important French chef of the past thirty years and he currently holds more Michelin stars than any other chef in the world. The style of L’atelier is a cross between high end Japanese sushi counter and French fine dining. It seems a little odd at first, but once the show begins it all just works. To date, this is the single best overall meal I have ever eaten. Every course was flawless. We opted for the 10-course tasting menu and the progression of dishes and flavors was masterful. To drink we ordered a bottle of 2010 Clos Saint Landelin Riesling. Since there were so many courses, I’ve decided to put the description of each dish along with the picture. This is a must visit restaurant in Paris.
Crab Royal with daikon and spices

Caviar with potato crusted salmon, citrus, potato foam

Green asparagus velouté with sorrel

Morel mushrooms with vin jaune, celery root stuffed macaroni, Comte cheese

Slow poached egg “en meurette” Robuchon style

Seared foie gras with hibiscus pickled green apple

Seared John Dory, wild asparagus, cockles, coconut-tandoori emulsion, lime

Veal sweetbreads, fresh bay leaf, romaine lettuce stuffed with smoked onion compote

Hanger steak, fondant potato, confit shallots, black cardamom jus

World famous Robuchon potato purée

Confit rhubarb, lime sorbet, lime tuile

“Chocolate temptation” ganache, ice cream, Oreo biscuit
